The accelerator pedal is not only retracted by the carburetor spring, there is also a spring behind the pedal that helps retract it.
If you buy a car with a broken accelerator pedal spring, you don't always discover it very quickly. It's just annoying that the pedal goes too far and you'll also complain about an uncomfortable gas dosage.
Replace the spring under your accelerator pedal and possibly that of the carburetor(s) and you will find that the gas dosage can be very comfortable.
